Minted Pineapple Jicama Salad

The original recipe called for a mango. I didn't have one so I used Pineapple and it was perfect. I am sure that mango would be a bonus but I wanted to use what was on hand.


Serves 4

Ingredients:

1 tablespoon fresh lime juice
2 tablespoons orange marmalade
1 teaspoon minced peeled fresh ginger
1 tablespoon fresh mint, chopped
1 ripe mango, sliced and peel
1 cup jicama, sliced

Instructions:

Combine first 4 ingredients in a large bowl, stir well with a whisk.

Add mango and jicama and toss gently to coat with juice mixture.
